The first probe was a test probe, and from what I recall, the Xindi had very
little (or no) information on Earth. The probe computers orders were likely
"Find Earth. Make uber-laser-destruction-path. Explode." Do you have
something against the people living in the central US or Asia?

Like I said, the first probe was a test. The Xindi made it very quickly, so
there was insufficient time to design it to be able to warp back to the
Expanse.
